Blueberry Buttermilk Pancakes - from Marrian J. in Bloomington, MN

Ingredients:

2 cups flour
2 Tablespoon sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
Two large eggs
2 cups buttermilk
1 cup blueberries
1/2 teaspoon grated orange zest

1/2 cup milk (optional - used to adjust batter for desired thickness)

Combine dry ingredients. Add wet ingredients and mix only until combined. Stir in the blueberries and the orange zest. I spray a griddle with Mazola cooking spray and get the griddle pretty hot.

Editors Tip - the frying pan or griddle is hot enough when a drop of water placed in it 'dances' around in the pan. Pancakes are ready to turn when the bubbles in the batter stay open on top and the batter does not flow back into the bubble hole quickly.
