Creamy Chicken with Asparagus Recipe 1 chicken breast -- boned and skinned 12 asparagus spears peeled and -- cut into 1' slices 1/2 onion -- chopped or 1 shallot -- chopped 3 tablespoons butter 1 tablespoon mustard 1 cup fresh cream 1 teaspoon grated lemon rind 2 tablespoons lemon juice 1/2 cup chicken stock salt and white pepper -- to taste paprika 1/2 cup dry white wine Season breast with salt and pepper. Set aside 30 minutes. Cut chicken into 1 1/12" strips. butter in a pan and cook chicken until almost brown. Add onion or shallot and cook until soft. Add wine. Cook 2 minutes. Add broth, stir in mustard and add asparagus. Cook 2 to 3 minutes. Stir in lemon rind, lemon juice and salt and pepper.Cook 1 minute. Stir in cream and cook to reduce to 3/4. Pour over pasta. |
