Jalapeno Peppers stuffed with cheese and crab meat.

These grilled peppers are just super, and not as hot as you would expect (if done correctly).

Ingredients:

16 Jalapeno peppers
4 oz Cream Cheese
3 oz Queso Fresco (fresh cheese - coarse grated)
2 T Sour Cream (heaping)
6 oz (1/2 package) imitation crab leg chunks - shredded
1/4 t salt
16 slices bacon

Mix the cream cheese, fresh cheese, sour cream, salt and shredded crab meat together.

Slice the peppers length-wise but do not cut into two pieces. Remove the pepper seeds and the webbing inside the pepper. Stuff the pepper with the crab and cheese mixture, wrap with a slice of bacon and secure with a toothpick. Grill the peppers over a medium hot bed of coals until the bacon is done - the cheese should be melted and the pepper cooked. Serve and watch the smiles - this is a great treat.

Makes 16 peppers.
