While in the wonderful Rio Grande Valley in Texas we've been
studying the local foods and have a few tested recipes to share with you. We love
these, and loads of people have asked us to share the recipes.
A word about our Mexican Recipes. Some of these are pure Mexican, and some are Tex-Mex recipes. Now a lot is written about which is which. Our take on this topic is that a lot of food found in Texas is a combination of influences, some originated south of the border, others are influenced by European, Cajun, and other types of cooking.
A word about Ingredients. For one thing
- size matters - a lot of these recipes call for items like avacodos, limes,
tortillas, peppers, etc., that vary in size. Do not be too concerned here, as
almost every recipe can be modified "on the fly" to accomodate your
own taste. Experiment a bit to find a recipe that your family will love. The recipes
on this page are starting points - enjoy the challenge of creating your own wonderful
recipe by modifying what we've provided here. For example, a lot of these call
for Cilantro - an ingredient we did not like while living in Minnesota. Now we
love it - tastes change! If you don't like it try the recipe without it. The same
goes for peppers - some may not be available in your grocery store - feel free
to make substitutions. Have fun while your cook!.
